Simply because we, Mathias and Tom, haven’t found one that was good enough for our needs.
We wanted:

• Native clients on all our platforms – no, a web client won’t do. To slow, to tedious, to little integration with the desktop, just not exactly at our finger tips.
• iPhone client - a must. Data entry (aka brain dump) needs to happen EVERYWHERE, be it on the commute or on the loo, in the plane or in bed!
• Synchronization over the air - not via iTunes or the likes. Much preferred, due to the simple – “Just works” type of integration. No manual sync, nothing to forget.
• Quick data entry - efficiency please!
  With lis.to you can simply write “Buy milk @grocer" or "Call Frank =tomorrow 1430 -5"
  (which will remind you 5 minutes before 14:30 the next day to call Frank).
